Nadia’s Healthy Kitchen is here to show you just how quick and simple it is to make this tasty dish… just follow these easy steps.
Step one, have a cuppa and get your head in the game. Just kidding no psyching up needed for this one. First add all of the veggies to the ActiFry (you can mix it up here if you wanted to swap in different veggies) Drizzle them with a little oil and the soy sauce, along with the curry paste, chopped ginger and garlic and put the ActiFry on cooking mode 7 (the wok option) for 20mins. Halfway through you will need to add the creamy coconut milk.

A mere 10 minutes later the ActiFry will beep to let you know your dreamy curry is ready. Serve it up with some rice and a sprinkling of chopped coriander leaves for that extra chefy touch. If you forget the steps check out the recipe on the free My ActiFry app which will take you through the recipe step by step.
