Let's elevate your Christmas appetizers with Chef Aidan's twist on the classic prawn cocktail
“Are you a starter or no starter house on Christmas Day? If you are, then this twist on the classic prawn cocktail is a winner and even if you’re not, it works all year round as the perfect canape or addition to a party buffet. Serving it on a rosemary skewer also adds a fun Christmas twist”, Says Chef Aidan. And don’t worry if you’re catering to vegan guests – this recipe can easily be adapted by using mushrooms or aubergines in place of the prawns.

Ingredients
Serves 1
• 4 King prawns (raw and deveined)
• 50g Butter
• 1-2 Cloves minced garlic
• 5grams finely chopped parsley
• Pinch of paprika or Turkish biber pepper flakes
• Salt and black pepper to taste (personal preference and amount)
• 1 Rosemary stick (with the laves removed from most of the stick except the top)
• 2-3 leaves per portion of washed and dried baby gem lettuce

Make the Garlic Butter:
• Place 50g of butter in a microwave-safe bowl or a small pan.
• Mince 1-2 cloves of garlic and add it to the butter.
• Add the finely chopped parsley to the butter.
• Melt the butter in the microwave or on the stovetop until fully melted and the garlic is fragrant. This should take about 30 seconds to 1 minute in the microwave or a few minutes on the stovetop. Stir in a pinch of paprika or Turkish biber pepper flakes.
Marinate the Prawns:
• Rinse the deveined prawns under cold water and pat them dry with a paper towel.
• Place the prawns in a bowl and pour half of the garlic butter over them. Ensure the prawns are evenly coated.
• Skewer the prawns onto the rosemary sticks. Season with salt and black pepper.
Grill the Prawns:
• Preheat your Tefal Optigrill+ to a medium-high setting.
• Brush the grill grates with a small amount of the remaining garlic butter to prevent sticking.
• Place the skewered prawns on the preheated grill.
• Grill for about 2 minutes on each side or until the prawns turn pink and opaque. Brush the prawns with some of the remaining garlic butter while grilling for extra flavour.

Serve
• Place the grilled prawns on a bed of lettuce.
• Drizzle any remaining garlic butter over the prawns.
• Garnish with a pinch of paprika or Turkish biber pepper flakes for an added touch of spice.
• Serve immediately

- ” Ensure the prawns are not overcooked by monitoring them closely on the grill; they cook very quickly. For an extra flavour boost, add a splash of lemon juice to the garlic butter. The rosemary skewers also add a subtle, aromatic flavour to the prawns, enhancing the overall dish.”
