March 25th: it’s the anniversary of Robert the Bruce taking to the Scottish throne in 1306 and of the slave trade being abolished in Britain in 1807; it’s also the day that Kim Woodburn (of Kim and Aggie fame) was born and it’s Sir Elton John’s birthday too; AND on top of all that, it’s International Waffle Day. A huge day for the world, I’m sure we can all agree.
Despite their name, waffles are not a load of waffle – they’re both a great savoury side and sweet treat and there’s not many foods that can lay claim to that.

Smoky sweet potato hash brown waffles
One of the most difficult decisions in life is whether to have potato waffles or hash browns with your fry-up on a Sunday morning. While you could have both, that’s quite a lot of potato for one meal. So, instead, why not combine the two?

Cheese and ham toastie waffles
The humble cheese and ham toastie is perfect in its own right. But replacing the bread with potato waffle while you keep that same melty cheese and yummy ham filling makes a perfect snack too.

Remember you're a womelette
Is it a Womble? Is it a wombat? No, it’s a womelette! That’s a waffle/omelette, in case you can’t quite work it out. We have to admit that it does sound more like an insult for someone who’s a little dense though.

Cookie dough waffles
If you happen to find yourself in the mood to bake cookies on International Waffle Day, then the law states that you cannot; you have to turn them into waffles. That’s not really a law, but if you’re choosing cookies over waffles on International Waffle Day, you need to take a long, hard look at yourself.

Our friends over at Pinch of Nom have a recipe for healthier strawberry and vanilla waffles, which use a batter made from oats, egg, fat-free yoghurt and sweetener. They’re baked before being topped with fresh fruit – you could even make some ‘ice cream’ to go with them by freezing some extra fat-free yoghurt.

To make these epic-sounding waffles for yourself, start by cooking up a batch of A Dash of Ginger’s vanilla buttermilk waffles, which are perfectly sweet and delightfully cakey.

Spread one of your waffles with a light covering of your favourite type of jam, and then some cake frosting or buttercream and a few fresh berries if you like. Pop another waffle on top and cover it in more frosting or a simple icing made from icing sugar and water and finish with liberal amounts of sprinkles.
