Imagine the classic comfort of a Yorkshire pudding, with its golden, crispy exterior and soft, fluffy centre, cradling a delightful Christmas crumble filled with seasonal fruits and a hint of holiday spices.
This recipe is a marriage of flavours and textures that promises to be a showstopper at your holiday table.
“Let’s be honest, not everyone loves a Christmas pudding – so this is an alternative dessert you can serve to your guests that is sure to spark discussion around the dinner table. There is always a debate in my house as to whether a Yorkshire Pud even belongs on a Christmas Dinner, but this fun dessert definitely has a place on many festive dining tables” says Aidan.

Ingredients
Serves 4
For the Yorkshire Pudding:
• 50g Milk
• 50g Plain flour
• 1 Medium egg
• Oil for preheatingFor the Fruit Filling:
• 2 Apples, quartered and cored
• 2 Pears, quartered and cored
• 30g Brown and white sugar
•1 teaspoon cinnamon
• 150ml water (add more if needed)
• Optional: pinch of ground ginger, cloves and nutmegFor Crumble topping and Serving:
•80g Plain flour
• 55g Cold butter, cubed
• 55g Golden caster sugar
• Optional:1 teaspoon cinnamon*Serve with either vanilla ice cream or custard.

Instructions
Made using Tefal Dual Drawer Air Fryer
Prepare the Yorkshire Pudding Batter:
• In a bowl, whisk together 50g milk, 50g plain flour, and 1 medium egg until smooth.
• Let the batter rest for at least 15 minutes.
Cook the Yorkshire Pudding:
• Preheat the oil in one drawer of the Tefal Dual Easy Fry air fryer at 180°C (350°F) for about 5 minutes
• Once the oil is hot, carefully pour the Yorkshire pudding batter into the preheated side of the Dual Easy Fry, forming a rectangle shape.
•Bake at 180°C (350°F) until the Yorkshire pudding is puffed and golden, about 20 minutes.
Prepare the Fruit Filling:
• While the Yorkshire pudding is baking, place the quartered and cored apples and pears in the other side of the Dual Easy Fry.
• Add 30g brown sugar, 30g white sugar, and 1 teaspoon cinnamon. Optionally, add a pinch of ground ginger, ground cloves, and ground nutmeg. Pour in 150ml water.
• Cook the fruit at 180°C (350°F) for about 10 minutes until tender and beginning to stew. Add more water if necessary to prevent the mixture from drying out.
Prepare the Crumble Topping:
• In a bowl, mix 80g plain flour and 55g golden caster sugar. Add 55g cold butter, cubed.
• Use your fingers to rub the butter into the flour and sugar mixture until it resembles breadcrumbs. Optionally, add 1 teaspoon cinnamon for extra flavour.
Assemble the Yorkshire Christmas Crumble:
• Once the Yorkshire pudding is baked and the fruit is stewed, carefully transfer the stewed fruit on top of the baked Yorkshire pudding.
• Evenly spread the crumble mixture over the top of the fruit.
Finish Cooking the Crumble:
• Set the Tefal Dual Easy Fry to 180°C (350°F) and cook for another 10-15 minutes until the crumble topping is golden and crisp. Monitor closely to ensure the Yorkshire pudding doesn’t become too crispy.
Serve:
• Once cooked, remove the Yorkshire Christmas Crumble from the Dual Easy Fry.
• Let it cool slightly, then cut into portions.
• Serve warm with a scoop of vanilla ice cream or a generous helping of custard.

“Freeze the leftover Yorkshires, so that when you come to cooking your crumble the Yorkshire is less likely to burn or turn too crispy. Air fryers make everything that bit crispier from Yorkshire puddings to roasties, plus it’ll reduce overall cooking time to allow more time to enjoy yourself on Christmas Day”
