From April to July, new potatoes are the real stars. Their appearance usually heralds the beginning of the summer season as they take their place on our dinner table.
New potatoes are simply young potatoes that are harvested before they become full grown. As such, they are sweeter because their sugar has not yet converted into starch. Together with their thin skin and crisp texture, they are ideal for summer salads and tasty dishes.
