British asparagus season is short (traditionally from St George’s Day on the 23rd of April to the summer solstice on the 21st of June), so pack it in while you can.

Rich in folate, fibre and vitamins A, C and K, asparagus makes a healthy addition to all sorts of meals, whether raw, blanched, grilled or roasted. We’re all familiar with the bundles of green spears but look out for the less common white or purple varieties.
You might associate asparagus with smelly wee but did you know it has anti-inflammatory properties, is good for the digestive system and could help ease a hangover? Well worth the whiff!
Sourcing and sorting
In season, British asparagus is everywhere from supermarkets and greengrocers to veg boxes, markets and PYO farms. The quicker you can eat it once it’s been picked the better it’ll taste so check best before dates for freshness.
Choose spears that are firm with tightly furled tips. Young spears, known as sprues, are thinner and only need the very ends trimming. Jumbo spears will naturally snap at their breaking point when you bend the stems so that you’re left with the tender bit.
