With Wimbledon in full swing, we only have a few days until we find out if our favourite tennis champions will be crowned in glory and handed over a cool 2million 😲 And to celebrate we are indulging in all baked goods that have a delicious strawberry twist.
There is nothing better to get you in the Wimbledon mood than strawberries… in fact, strawberries and cream go hand in hand with tennis so it would be rude not to indulge, it is tradition after all 😉
But we want to take it that little bit further… how does Strawberry, lime and basil tartlets sound? Or perhaps Strawberry and matcha tea tartlets will tickle your fancy? Then there’s Strawberry layer cake, Strawberry clafoutis and even Strawberry cupcakes… with so many delicious strawberry based super yummy bakes, you are spoilt for choice with the Tefal Cake Factory. Because what’s better than strawberries and cream… strawberry cupcakes with a generous helping of whipped cream icing… you will most definitely need a second helping of these light, fluffy and moist cupcakes.
To make your own here’s how you do it… beat the eggs and sugar with a pinch of salt. Add the lemon juice and whipping cream. Beat vigorously (we suggest channelling your inner Serena) Add the flour and baking powder, and mix well to get a uniform mixture.
70g caster sugar – 1 egg – 80ml whipping cream – 10ml lemon juice – 120g plain flour – 1/2tsp baking powder (2g) – 1 pinch of salt.
Next, add the diced strawberries, mix and pour equally into the muffin moulds. Place the moulds in the Cake Factory and select the mode individual cakes. The Cake Factory will let you know when these babies are ready, all you need to do it allow them to completely cool before removing them from the moulds, that means keeping those grubby hands off 😉
While you are waiting for the cakes to cool put the whipping cream, mascarpone and icing sugar for the topping in a large bowl and whisk vigorously to obtain a nice whipping cream (tennis grunting noises optional). Let it cool in the fridge.
70g mascarpone – 100m whipping cream – 50g icing sugar.
