Wallflower Kitchen is the personal recipe collection of vegan cook Aimee, who has been letting us in on her secrets since 2012, and we’re so glad she has. She’s the first to admit that she knows how to make mouthwatering treats, but she’s a dab hand at the healthier stuff too.
To jump on board this latest Spin Class challenge, you’ll need a whole load of tasty veggies – aubergine, courgette, peppers and mushrooms – some stock, oil, garlic and seasonings. After a bit of chopping, it’s a case of chucking all these ingredients into your ActiFry and letting it do its magic for half an hour. Things don’t get much simpler than that.
